Gazpacho

As the heat rises, we have no choice but to bare a little more flesh, so with that in mind, I made a light Gazpacho for lunch. I blended ripe tomatoes, cucumber, red pepper, celery, spring onions and garlic with cold pressed olive oil, lime juice & cayenne pepper then topped it with mini croutons, diced green mango and coriander. The outcome was refreshing, sharp, zingy and sweet. Click here for the gazpacho recipe.
