    Blackbean Rotini with Sweetcorn, Feta and Parsley in a Honey Dressing

    Blackbean rotini are pasta shapes (similar in shape to fusili) made entirely of organic non-GMO blackbeans. They are therefore gluten free and high in protein and iron so ideal for vegan and GF diets as well as athletes. More importantly for me(!) this satisfied both the kids and I for lunch today. The children thought the black bean pasta were chocolate flavoured, and is it wrong that I didn't correct them? The sweetness of the honey dressing also appealed to them. I added a little greenery and spice to mine with some freshly chopped parsley and black pepper. Since cold, this is ideal for school lunchboxes too. The pasta is on sale at Spicebox Organics, online or in the store in Sai Ying Pun and there is a special deal on in August with two boxes for $150. We are excited to try the rest of the range next which includes a red lentil fettuccini. 

     

    What you need:

     

    1 cup of uncooked black bean rotini

    1 cup of sweetcorn

    1/2 cup of cubed feta

    Tablespoon of chopped parsley

     

    Dressing:

    2 tablespoons of extra virgin olive oil

    2 tablespoons balsamic vinegar

    1 teaspoon of runny honey

    1 teaspoon of Dijon mustard

    Black pepper

     

    Method:

     

    Boil the pasta for around 7 minutes. 

    While the pasta cooks, mix your salad dressing. 

    Drain the pasta and combine with the sweetcorn,

    feta and dressing.

    Scatter parsley and grind black pepper on top (optional) 

     

    Serves 1 adult and 1 child.
