Wild Tuna, Bean & Pasta Salad in a Honey Mustard Vinaigrette

    June 10, 2015

It's not glamorous and I wouldn't serve it to guests, but it is delicious, filling, easy and best of all, ideal for packed lunches since it can be prepacked ahead of time without any need to keep the dressing separate as there is nothing to go soggy. Perfect for kids as well as adults.

Read more "yummy mummy" packed lunch ideas (taking 5-10 mins prep).

    What you need

    Salad

1 can wild albacore tuna. This one is no. 1 rated by WWF for being dolphin-safe and sustainable.

    2 cups pre-cooked fusili

2 cups steamed green beans, chopped

    2 spring onions chopped finely

    Dressing

    4 tablespoons olive oil

    4 tablespoons balsamic

    2 teaspoons honey

    2 teaspoon wholegrain mustard

    Salt & pepper

    Method

Put your pasta and green beans onto boil in separate pans. Allow to cool.

Combine the salad ingredients in a jar and shake until fully mixed together.

Mix together the pasta, tuna, beans, spring onions and dressing. Refrigerate until required.

    Serves 2 adults
