Grower Champagne ‘Récoltant-Manipulant’
The vineyards are located primarily in the town of Polisot. (18ha).
Champagne Piollot is produced by Roland Piollot and his wife Dominique Moreau from vines owned by Roland's family in the Aube.
Roland’s father was a true paysan, passionate about terroir and agriculture who refused to rip out his old Pinot Blanc vines and insisted on replanting the young vineyards himself using the traditional selection massale technique.
In 1986, Roland decided to bottle the wines himself, and since 2009, they have converted the vines to organic farming.
The house style is based on crisp, refreshing champagnes that are elegant and easy to drink.
Notes: In the Cote des Bar region of Champagne it is common for rose-style wines to be made using extended maceration of the Pinot Noir grape. The grapes (only Pinot Noir is used) are first crushed by foot and the grapes then macerate for up to five days before pressing to extract the juice which, by this time, has developed cherry, strawberry and raspberry overtones. This wine has an appealing intensity and a lingering freshness. It is a Champagne of true elegance.
