Baked Sweet Potato with Coconut Yoghurt and Cinnamon

Baked sweet potato with coconut yoghurt and a sprinkling of cinnamon. Rub the potato in coconut oil and bake at 180c for around an hour depending on it's size. Dollop of yoghurt, sprinkle of cinnamon and hey presto. The kids should love it too especially if you encourage them to assemble it themselves. 3 super nutritious components with high levels of antioxidants (cinnamon), probiotics (yoghurt) and vitamin c (sweet potato).
